Vegan Chickpea Tuna Salad

14oz can of chickpeas, rinsed and drained
1/4” cup of vegan mayonnaise
1 tbsp of whole grain mustard
1 1/2 tbsp of apple cider vinegar
1 celery rib, chopped
2 tbsp chopped red onions
1 tbsp diced green onions / scallions
1/2 tsp fresh ground pepper
1/4 tsp cayenne pepper or crushed red pepper flakes
1/4 tsp smoked paprika
1/4 tsp himalayan pink salt
Combine chickpeas, mayonnaise, mustard, apple cider vinegar, celery, red onions, black pepper, Himalayan pink salt, and cayenne pepper. Blend with food processor or immersion blender.
Blend for 20 to 30 seconds until chickpeas are minced.
Top with diced scallions, smoked paprika, and red pepper flakes.
Ready to serve.
