Shitake Bacon Recipe
Sprinkle them on your salad, on your sandwich, or anyway which you like your bacon!

1 TB olive oil
1/4 tsp salt
3 cups shiitake mushroom caps, sliced thinly
Preheat oven to 400. Place a over a baking sheet, set aside.
Remove stems from mushroom caps. (You won’t need the stems, but save them for composting!)
Slice mushroom caps no more than 1/4” thickness
Line back sheet with aluminum foil or parchment paper and coat with olive oil evenly
Place the shiitake in a single layer on to the baking sheet. Bake for 15 minutes, flip, then bake for an additional 15 minutes*. Keep an eye on them towards the end to ensure they do not burn.
Remove from the oven and place on paper towels to drain excess oil. As they drain, the edges will become crispy. Serve immediately.
